- HIGH QUALITY: Unflavored beef gelatin 300° Bloom. High viscosity, resists high temperatures, colorless (once it is prepared), kosher, at least 87% protein. The higher the bloom value, the higher the melting and gelling points of a gel, no jiggle and the shorter its gelling times. The 300° Bloom gelatin is the strongest in the market. The powder sold in supermarkets is usually about 120° Bloom.

This is an indication of it's purity and the smell will dissappear once it has gelified. Some other gelatins do not smell, this is because they are not 100% gelatin and are mixed and diluted with other ingredients.

You will save up to 30% of gelatin in each one of your recipes, the amount saved may vary depending on wich degree of gelatin bloom you can compare it to saving 10% with 275° Bloom and 20% with 250° Bloom.
