- I Contadini Giardiniera is processed from the end of September to the end of November and is made of four vegetables, red and yellow peppers, fennels, carrots, cauliflowers, which are harvested and immediately processed very fresh. The vegetables in the Giardiniera are manually picked and individually prepared while super fresh. Preparation is still carried out by hand, by expert workers, just as set down in the traditional recipe.
- Sweet carrots, fragrant fennels, crisp cauliflower and fleshy peppers, after being picked by hand, are skillfully and separately prepared before being mixed together to create a triumph of colors. The vegetables are combined into a balanced mix and preserved in glass jars with a delicate sweet and sour tanning, creating colorful effects with a refined, elegant flavor.
- The Giardiniera is added to simple, flavorsome dishes such as rice or pasta salads. It is also an excellent side dish on its own or a garnish for more elaborated recipes, as well as provides interesting combinations with spicier cold cuts such as speck, coppa and lardo. Giardiniera is also excellent with fresh, creamy cheeses, mozzarella Fiordilatte and Mozzarella di Bufala, and pairs really well with main courses of boiled meat or fish, such as salted cod, baked bream, and grilled salmon.
